Twin Falls, Idaho (KMVT-TV) Jane Deal with Idaho Preferred brings a few items you can find at the Twin Falls Farmer's Market!

Here are some easy and delicious recipes you can make with items available.


Grilled Homestead Beef Franks and Sauerkraut Salad

1 package Homestead Old Fashioned Beef Franks
(or Beef Bratwurst)
1 jar sauerkraut, drained
1 carrot, julienned
1/2 Kauffman Farms red or green bell pepper, julienned
2 pickled chili peppers, seeded and chopped
1/4 cup red onion, thinly sliced
1/3 cup vegetable oil
3 Tbs rice vinegar
1 Tbs horseradish
2 Tbs brown mustard
2 Tbs fresh dill, chopped
salt and freshly ground pepper to taste

Place the sauerkraut in a medium size salad bowl and add the carrot, bell pepper,
pickled peppers and red onion. Stir to combine. In a smaller mixing bowl, combine the
rice vinegar, horseradish, brown mustard and fresh dill. Slowly whisk the oil into the
bowl to combine. Pour the dressing over the salad and mix together. Add salt and
pepper to taste. Allow salad to sit in the refrigerator for 2-3 hours to marinate. Place
Homestead Farms beef franks on a heated grill or in a frying pan. Grill or saute╩╝ for 5-8
minutes, or until franks are completely heated through. Serve immediately with
sauerkraut salad.
 



Peach and Tomato Salsa

2 Kelley's Orchard peaches, chopped
4 Kauffman Farms roma tomatoes, chopped
1/2 cup Homestead Farms bacon, fried until crisp and chopped
1/2 Kauffman Farms bell pepper, chopped
1/3 cup sweet onion, chopped
1-2 Kauffman Farms hot waxy or jalapeno peppers, seeded and chopped
2 tsp brown mustard
1/4 cup cilantro, chopped
1 Tbs honey
salt and pepper to taste

Place peaches, tomatoes, bacon, bell pepper,and sweet onion in a medium size mixing
bowl and combine. Stir in a desired amount of chili peppers, mustard, cilantro and
honey. Season with salt and pepper. Allow salsa to sit in refrigerator for 1 hour to
combine flavors. Serve with tortilla chips or on grilled pork or chicken.
