Wild Mountain Berry Crepes: (Makes 6-7 crepes)

Crepe Recipe
¾ cup flour
Dash salt
2 whole eggs
8 oz. non-fat milk
1 T lemon zest
1 oz. sugar

Procedure:
Mix 4 oz. non-fat (hold 4 oz. back for later) milk with remainder of ingredients well. Then add remaining
4 oz. non-fat milk and mix well.

Cooking method:
Preheat non stick frying pan to about medium heat. Spray pan with pan spray, add 2 oz crepe batter
and let cook for about 1-2 minutes on one side then flip over and finish for 30 seconds on other side.
Place on a cool plate.

This recipe makes 8-10 crepes.

Assembly – per person

2 oz. berry Greek yogurt
4 ea. blackberries and raspberries, 2 strawberries quartered, ½ oz. sliced almonds

Wild Mountain Berry Glaze
1 cup frozen blackberries
1 cup water
1 oz sugar
1 tsp cornstarch

Add all ingredients and bring to boil. Boil for 2 minutes and mix well. Pull from heat and strain in to
shallow pan and let cool to room temp.

180 calories, 10 grams of protein, 30 grams of carbohydrate, <3 grams of fat (all unsaturated from the
almonds), 54 mg of cholesterol, 92 mg of sodium
