BALLARD'S GOLDEN GREEK COCKTAIL SANDWICHES RECIPE
1 large package Ballardʼs Idaho Golden Greek Cheese
1 onion, thinly sliced
2 tablespoons olive oil
1/4 pound sliced roast beef
1/2 cup sour cream or mayonnaise
1 tablespoon horseradish
salt and pepper to taste
whole black olives for garnish
Cut the cheese into 1/4 inch slices, then cut the slices in half and set aside. Heat the olive oil in a medium size skillet and add the onions. Saute the onions for 6-8 minutes or until onions turn brown and caramelize, stirring occasionally. Set onions on a plate and
set aside. In a small bowl, mix together the sour cream or mayonnaise and the horseradish. Season with salt and pepper and set aside. Heat up a non-stick skillet over medium high heat and add some of the cheese slices. Brown the slices on both sides, then set on a plate and keep warm. Continue to cook the other cheese slices. When ready to assemble sandwiches, place a piece of cheese on a plate then top with a slice of roast beef and some caramelized onions. Spread some of the sauce on another slice of cheese, and place sauce side down on top of the sandwich. Secure sandwich with an
olive on a toothpick and serve immediately.
