Jill Skeem, a macrobiotic health counselor shows us an easy way to make Mexican Bean Cups.
The dish is easy to make, especially if kids want to help in the kitchen.
Mexican Bean Cups
1 package of wonton wrappers
1 can black beans, drained and rinsed
½ cup white or red onion
½ cup corn (can be frozen but thawed)
2/3 cups salsa (your favorite brand – you can add more if you like)
*You can garnish with cheese, guacamole, sour cream, scallion, shredded lettuce, tomatoes or olives
Preparation of muffin tins and wonton wrappers
Pre-heat 350 degree oven. Grease one cupcake or muffin tin. Brush each wonton wrapper with vegetable oil and press the wonton wrapper into the tin. Put tin with wrappers to bake for 10 minutes.
Preparation of Bean Mixture
Combine all ingredients in a bowl and stir gently. Then take approximately 1 tablespoon, or more if needed, of the bean mixture and place in each wrapper after they baked for 10 minutes. Then put back into the oven for another 8-10 minutes.
* If you want to add cheese, add the cheese with 1-2 minutes left of cooking time. Then garnish the bean cups with shredded lettuce or guacamole or sour cream or red onion or whatever toppings you prefer.
