“Celebration of Life” Potatoes

1 pound peeled potatoes
1 cup cheddar or monterey jack cheese, grated
1 cup cheese curds, chopped
1/2 cup bacon, cooked until crisp and chopped
1 cup sour cream
1/2 cup chicken broth
1/2 cup buttermilk
1/4 cup fresh chives, chopped
2 tablespoons butter, melted
1 teaspoon seasoned salt
salt and freshly ground black pepper


1 cup panko bread crumbs
2 tablespoons butter, melted

Preheat the oven to 350 degrees. In a large mixing bowl, combine the cooked and
shredded potatoes with the grated cheese, chopped cheese curds, bacon, sour cream,
buttermilk, chives, melted butter and seasoned salt. Season with additional salt if
needed and ground pepper. Spray a 2 quart glass baking dish with cooking spray or
grease with butter. Pour the potato mixture into the prepared pan and spread until even
with a rubber spatula. In a small mixing bowl, stir together the bread crumbs and melted
butter. Spread over the top of the potatoes. Bake for 45 minutes to an hour, or until
bread crumbs have browned on the top and potatoes are bubbling.
