Deviled Chinese Eggs

6 tea eggs
1/4 cup mayonnaise
1 teaspoon soy sauce
2 teaspoons hoisin sauce
1/4 teaspoon sesame oil
1 tablespoon green onion, finely chopped
2 green onion, sliced
rice stick noodles
canola or vegetable oil

Cut the tea eggs in half, lengthwise. Remove the yolks and place in a small mixing bowl. Mash the yolks with a spoon until smooth and stir in the mayo, soy sauce, hoisin, sesame oil and chopped green onion. Stir the mixture until smooth and spoon back into the egg-white halves. Place the eggs on a serving platter and set aside. Pour oil into a frying pan until it measures at about half an inch. Heat the oil over medium high heat and add several rice stick noodles to the oil. The noodles will puff up immediately (4-5 seconds) if the oil is at the right temperature. Take the noodles out of pan and place on a plate lined with a paper towel. Garnish the eggs with the cooked rice sticks and sliced green onions.
