You Go Granola!

1/2 cup Agave syrup
1/4 cup water
2 teaspoons vanilla extract
1 teaspoon salt (optional)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
4 cups old fashioned oats
1 cup nuts (walnuts, slivered or sliced almonds, pine-nuts, pecans, roasted peanuts, or
pepitas)
1/2 cup dried fruit (apricots, dates, berries, etc.)

Preheat oven to 250 degrees. Cover a cookie sheet with parchment paper or foil and
set aside. Mix together the Agave syrup and water in a small saucepan. Heat the
mixture over medium heat and bring to a boil. Take off of the heat and stir in the salt,
cinnamon and nutmeg. Measure the oats and nuts into a large mixing bowl. Pour the
syrup mixture over the oats and nuts and mix well. Spoon the granola onto the lined
cookie sheet and place in the preheated oven. Bake for 45 minutes to one hour, stirring
the granola every 15 minutes. (The oats and nuts should be golden brown in color when
the granola is done.) Place the cookie sheet on a cooling rack. When the granola is
room temperature, stir in the dried fruit. Serve with milk or yogurt.
