Update: Lamb Stew And Wine With Pandora And Jon

Executive Chef Pandora Handley makes a wonderful Lamb Stew as Sommelier Jon Melone pairs it with a wine from Le Marche wine region in Italy.

Lamb Stew Recipe
2 lbs Lava Lakes Lamb Stew Meat
½ cup all purpose flour
1 tsp salt
½ tsp black pepper
1/3 cup olive oil
3 garlic cloves, minced
1 large yellow onion, large dice
2 tbsp minced rosemary
2 tbsp minced mint
1 tbsp red pepper flakes
2 cans diced roma tomatoes, with juice
2 cans GreatNorthern beans, rinsed and drained
3 cups vegetable stock
salt and pepper to taste
Combine flour, salt, and pepper. Add lamb and toss to coat.
Heat oil in large stock pot, add lamb and onion, cook stirring until meat is evenly browned and onion is slightly caramelized. Toss in minced garlic, stir, add remaining ingredients, bring to a boil. reduce heat and let simmer 45 minutes.
