Watch the interview: Spaghetti Squash with Roasted Bell Peppers and Lemon Chicken How to Prepare Spaghetti Squash: Pre-Heat oven to 375 degrees. Cut Spaghetti squash in half length wise. Be careful when using knife, squash likes to roll and could be dangerous. Spoon out the seeds. Place in a casserole dish or baking dish flesh side down. Place a little water in the bottom then cover with Aluminum foil. Place in oven and cook for 45 minutes or until squash is tender. Pull out oven and let cool for about 1 hour. Take a fork and run it through the squash and it will pull out like spaghetti strands. How To Prepare Roasted Bell peppers: Turn BBQ Grill on or just use open flame on gas stove. Take 3-4 red bell peppers and wash. Place right on BBQ or open flame. Leave till the peppers start turning black. As they turn black rotate evenly till entire pepper is black. Pull off the heat and cool for about 1 hour. Run under water and peel away the black outer shell. Cut top off and pull seeds out. Ingredients for Roasted Red pepper Sauce. 3-4 Roasted and seeded bell peppers ¼ tsp ea. Kosher salt, Coarse Black Pepper Pinch sugar 1 tsp basil ½ tsp garlic In a Blender place all ingredients and blend till smooth. Place in small sauce pan and heat up to at least 145 degrees. Ingredients for Spaghetti Squash: 2 cups Spaghetti squash 2 T butter 1/4 tsp ea. Kosher salad and coarse black pepper 1 T chopped fresh basil 1 Tsp Shredded Parmesan Procedure: In a sauté pan add butter and place on medium heat on stove top. Add Spaghetti squash , salt, pepper and basil. Cook until Squash is hot or 145 degrees internally. Present Squash on plate, then top with roasted red pepper sauce and Parmesan cheese. Lemon Chicken (4 servings) 4-4 oz skinless chicken breast marinated in: 2 oz olive oil, 1 tsp crushed garlic, ½ tsp small chopped fresh oregano, pinch kosher salt, pinch coarse pepper, ½ tsp lemon pepper. Marinate for 2 hours then broil to perfection! Chicken will cook about 2-3 minutes on each side. Keep rotating so chicken will not burn. Comments ( |
